ABOUT ME
I’m in my early twenties and recently graduated from Cornell University. I grew up both in and around New York City and had the best childhood spent exploring the city and the beach. In my free time, I enjoy nothing more than spending time with family and friends and traveling. I also love trying new restaurants and cooking…but the latter was not always the case.
My introduction to cooking came pretty abruptly when I was diagnosed with celiac disease the night before embarking on a solo five-month exchange semester in Italy. I had to learn how to cook in a foreign country that is internationally renowned for its delicious, gluten-filled food.
When I finally felt like I had mastered the art of gluten free cooking (it’s harder than it looks!), my exchange semester came to a close, and I returned home to NY. Unfortunately, back in the States, I began to experience a whole slew of new health issues. I was soon diagnosed with PCOS, insulin resistance, high cortisol, hormonal imbalances, and vitamin deficiencies.
After receiving these diagnoses and following the advice of the many doctors and dietitians I visited, I started to feel so much better. I soon became passionate about nutrition, food, and overall health. I now strongly believe that the food we eat has an enormous effect on our physical and mental well-being. I’ve seen this firsthand in my own personal health journey. A longer blog post about my story is coming soon.
In addition to nutrition, I also love photography and writing. My photography has been exhibited both nationally and internationally. I wanted to combine these interests and document the recipes I created, so The Celiac Hacks was born.
ABOUT THE BLOG
This blog is my passion project. I like to think that I’m “hacking” celiac disease by sharing my favorite gluten free recipes and resources. You’ll find lots of meal inspiration, celiac resources, and gluten free travel guides here. Stay connected on Instagram as well for more bite-sized content.
I see no reason to overcomplicate meals or utilize obscure ingredients. This mentality is reflected in all of my recipes; they’re simple and made from household staples.
Many recipes are dairy free and vegan as well. Rest assured, they still taste great and will please eaters with and without food allergies.
My goal is to inspire you in the kitchen and assure you that gluten free cooking is doable and delicious. I hope I can also make life with celiac disease, or other health issues, simpler. I’ve found that is so much easier to manage (and cope with) new dietary restrictions when finding a community of others going through the same thing.
